- 2 cups cooked chicken, shredded or diced
- 1/2 cup pesto sauce
- 8 large lettuce leaves (Romaine or Butter Lettuce)
- 6 slices crispy bacon, chopped
- 1/2 cup ranch dressing
- 1/2 cup cherry tomatoes, halved (optional)
- Salt and pepper to taste
Instructions
- In a skillet over medium heat, cook the bacon until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate to absorb excess grease.
- In a mixing bowl, combine the shredded chicken and pesto sauce. Mix well until all the chicken is coated evenly.
- Wash and dry the lettuce leaves thoroughly.
- Lay a lettuce leaf flat on a plate. Spoon some of the pesto chicken mixture into the center of the leaf. Top with chopped bacon, a drizzle of ranch dressing, and halved cherry tomatoes if using.
- Fold the lettuce over the filling, and enjoy immediately!
