Ingredients
Scale
- 1 lb (450g) boneless skinless chicken breasts, diced
- 2 tablespoons honey
- 2 tablespoons chipotle chili powder
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 cups cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup chopped fresh cilantro
- Lime wedges for serving
Instructions
- In a large bowl, combine the diced chicken, honey, chipotle chili powder, olive oil, salt, and pepper. Mix until the chicken is well-coated and let it marinate for about 10 minutes.
- Heat a large skillet over medium heat. Once hot, add the marinated chicken to the skillet. Cook for about 6-8 minutes, stirring occasionally, until the chicken is cooked through and golden brown.
- While the chicken is cooking, prepare your rice according to package instructions. If using leftover rice, just reheat it in the microwave or on the stove.
- Once the chicken is cooked, it’s time to put your bowls together! Start with a base of rice, then add a generous scoop of the chipotle chicken on top.
- Next, layer on the black beans, corn, avocado slices, and cherry tomatoes. Sprinkle with fresh cilantro for that extra burst of flavor.
- Squeeze fresh lime juice over the top for a zesty finish. Enjoy your delicious Honey Chipotle Chicken Bowls while warm!
Notes
Marinate the chicken for longer for deeper flavors. Customize toppings based on preference.
