  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream (240ml)
  • 1 cup chicken broth (240ml)
  • 1 cup shredded cheese (like cheddar or mozzarella)
  • 1 teaspoon Italian seasoning
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • 4 large potatoes, diced (about 2 lbs / 900g)
  • 1 tablespoon butter

Instructions

  1. Prepare the potatoes: Start by peeling (if desired) and dicing the potatoes into bite-sized pieces. Rinse them in cold water to remove excess starch.
  2. Cook the potatoes: In a large pot, bring water to a boil and add the diced potatoes. Cook for about 10-12 minutes until fork-tender. Drain and set aside.
  3. Season the chicken: While the potatoes are cooking, season the chicken breasts with salt and pepper on both sides.
  4. Brown the chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes per side until golden brown. Remove from the skillet and set aside.
  5. Make the sauce: In the same skillet, lower the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant. Pour in the heavy cream and chicken broth, stirring to combine.
  6. Add the cheese: Gradually add the shredded cheese to the sauce, stirring constantly until melted and creamy. Season with Italian seasoning, salt, and pepper to taste.
  7. Combine everything: Add the cooked potatoes to the skillet, then return the chicken breasts to the pan, spooning the sauce over the top. Cover and let simmer for about 5-10 minutes until the chicken is cooked through (internal temperature should reach 165°F / 74°C).
  8. Garnish and serve: Sprinkle with fresh parsley before serving. Enjoy this creamy, cheesy goodness!

Notes

For a thicker sauce, let it simmer longer to reduce. Use fresh garlic and herbs for better flavor.
