- 4 cloves garlic (minced)

- 1 cup chicken broth (low-sodium)
- 1 teaspoon dried Italian herbs (or a mix of oregano and basil)
- 1 cup shredded cheese (mozzarella or cheddar works great)
- 4 medium-sized potatoes (peeled and diced into cubes)
- 1 tablespoon butter (for flavor)
- Fresh parsley (for garnish, optional)
Instructions
- Season the chicken pieces with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook until golden brown, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the diced potatoes. Cook for about 10 minutes, stirring occasionally, until they start to soften.
- Stir in the minced garlic and cook for another minute until fragrant.
- Pour in the chicken broth and heavy cream. Add the dried herbs and bring to a simmer. Stir well to combine and let it cook for 5 minutes.
- Return the cooked chicken to the skillet. Stir in the shredded cheese until melted and creamy, about 3-5 minutes.
- Allow everything to simmer together for another few minutes until the chicken is cooked through and the potatoes are tender.
- Remove from heat, and if desired, add a pat of butter for extra richness. Sprinkle with chopped parsley before serving.
Notes
If the sauce gets too thick, add a splash more chicken broth or cream to achieve the perfect creamy consistency.
