  • 4 boneless, skinless chicken breasts (about 1.5 lbs, cut into bite-sized pieces)
  • 1 tablespoon olive oil (for cooking)
  • Salt and pepper (to taste)
  • 4 cloves garlic (minced)
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • 1 cup chicken broth (low-sodium)
  • 1 teaspoon dried Italian herbs (or a mix of oregano and basil)
  • 1 cup shredded cheese (mozzarella or cheddar works great)
  • 4 medium-sized potatoes (peeled and diced into cubes)
  • 1 tablespoon butter (for flavor)
  • Fresh parsley (for garnish, optional)

Instructions

  1. Season the chicken pieces with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook until golden brown, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the diced potatoes. Cook for about 10 minutes, stirring occasionally, until they start to soften.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Pour in the chicken broth and heavy cream. Add the dried herbs and bring to a simmer. Stir well to combine and let it cook for 5 minutes.
  5. Return the cooked chicken to the skillet. Stir in the shredded cheese until melted and creamy, about 3-5 minutes.
  6. Allow everything to simmer together for another few minutes until the chicken is cooked through and the potatoes are tender.
  7. Remove from heat, and if desired, add a pat of butter for extra richness. Sprinkle with chopped parsley before serving.

Notes

If the sauce gets too thick, add a splash more chicken broth or cream to achieve the perfect creamy consistency.
