- 1 cup cottage cheese (225g), well-drained
- 1/2 cup unsweetened cocoa powder (50g)
- 1/2 cup almond flour (50g)
- 1/3 cup honey or maple syrup (80ml)
- 2 large eggs
- 1 tsp baking powder (5g)
- 1 tsp vanilla extract (5ml)
- 1/4 tsp salt
- 1/2 cup chocolate chips (90g), optional
Instructions
- Preheat the oven to 350°F (175°C).
- In a blender or food processor, combine the cottage cheese, eggs, honey (or maple syrup), and vanilla extract. Blend until smooth and creamy.
- In a large mixing bowl, whisk together the cocoa powder, almond flour, baking powder, and salt until well-combined.
- Pour the blended cottage cheese mixture into the bowl with the dry ingredients. Stir until just combined—don’t overmix!
- Gently fold in the chocolate chips, if using.
- Grease an 8×8 inch baking dish with cooking spray or line it with parchment paper.
- Pour the brownie batter into the prepared dish and spread it evenly with a spatula.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Let the brownies cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.
- Cut into squares, serve, and enjoy!
