  • 1 cup cottage cheese, full-fat or low-fat
  • 4 large eggs, room temperature
  • 1 cup blueberries, fresh or frozen
  • 1 cup almond flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons honey or maple syrup (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the cottage cheese and eggs. Use a whisk or electric mixer to blend until smooth and creamy.
  3. Add the almond flour, baking powder, and salt to the mixture. Stir until well combined. The batter should be thick yet spreadable.
  4. Gently fold in the blueberries with a spatula, being careful not to crush them.
  5. Pour the batter onto the prepared baking sheet, spreading it out evenly into a round shape about 1 inch thick.
  6. Bake in the preheated oven for 20-25 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
  7. Once baked, remove from the oven and let it cool on the baking sheet for about 5 minutes. Then transfer to a wire rack to cool completely.

Notes

Make sure the cottage cheese is smooth for the best texture. Don’t overmix when folding in the blueberries.
