- 1 cup cottage cheese, full-fat or low-fat
- 4 large eggs, room temperature
- 1 cup blueberries, fresh or frozen
- 1 cup almond flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons honey or maple syrup (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine the cottage cheese and eggs. Use a whisk or electric mixer to blend until smooth and creamy.
- Add the almond flour, baking powder, and salt to the mixture. Stir until well combined. The batter should be thick yet spreadable.
- Gently fold in the blueberries with a spatula, being careful not to crush them.
- Pour the batter onto the prepared baking sheet, spreading it out evenly into a round shape about 1 inch thick.
- Bake in the preheated oven for 20-25 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Once baked, remove from the oven and let it cool on the baking sheet for about 5 minutes. Then transfer to a wire rack to cool completely.
Notes
Make sure the cottage cheese is smooth for the best texture. Don’t overmix when folding in the blueberries.
