Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1/4 cup basil pesto
  • Salt and pepper to taste
  • 8 large romaine lettuce leaves
  • 1 ripe avocado, sliced
  • 6 slices crispy bacon, chopped
  • Cherry tomatoes, halved (optional)
  • Fresh basil leaves (optional)
  • Shredded cheese (like mozzarella or feta) (optional)

Instructions

  1. In a skillet over medium heat, cook the bacon until it’s crispy, about 5-7 minutes. Remove from skillet and drain on paper towel.
  2. In a mixing bowl, combine the cooked chicken with the basil pesto. Stir until well coated and season with salt and pepper to taste.
  3. Rinse the romaine lettuce leaves under cold water and pat them dry with a paper towel.
  4. On each lettuce leaf, spoon in a generous amount of the pesto chicken mixture. Top with slices of avocado and sprinkle the crispy bacon on top.
  5. If desired, add cherry tomatoes, fresh basil, or cheese to your wraps.
  6. Fold the lettuce over the fillings to create a wrap. Serve immediately.
